Share the Good News...

Hard to believe, but March is here, Lent is here, and Daylight Savings Time is here. Set your clocks ahead an hour before going to bed on Saturday night.

Snow is piled everywhere, and folks in charge of getting it off roads and sidewalks are running out of places to put it. Experts say flooding is likely at melt down. We'd all really enjoy some warmer weather, but let's pray for a gradual thaw, and not a sudden switch to 70 degrees and rain!

Lent has begun, and Easter will be here in six weeks. Unless we get some warmer weather pretty soon, Easter baskets may need to be delivered by a Snowshoe Hare instead of the Easter Bunny!

GIVING IT UP FOR LENT

On the first Saturday of Lent a man took his young son to a baseball game. While they were waiting for the game to start the Dad asked the boy what he had given up for Lent. The young man said he had given up candy. The boy asked Dad what he was given up, and Dad said, "I've thought about this a lot and decided to give up liquor."

Later in the game, the beer man came by, and the man ordered a beer. His son objected, "Hey, I thought you were giving up liquor!"

His dad answered, "Hard liquor, son. I'm giving up hard liquor. This is just a beer."

"Well then, I'm just giving up hard candy," the boy declared.

THINGS TO DO, PLACES TO GO

Veterans, their families and friends, and the general public are invited to a Veteran Town Hall Meeting at Pembine Town Hall at 2 p.m. Thursday, March 14. Pembine Town Hall is located at N18765 Sauld Street in Pembine. The informational event is sponsored by the Oscar G. Johnson VA Medical Center in Iron Mountain, Mich.

Leaders from the VA Medical Center and Marinette County Veterans Service Office will be on hand to provide a presentation on VA's new initiatives and programs, such as VA's new Whole Health Program and answer any questions regarding VA health care.

On Saturday, March 9 Crivitz VFW Post 2063 is hosting a Gun Show at Crivitz Village Hall. Open to the public from 8 a.m. to 2 p.m. Admissions is $4 for those aged 12 and older. Buy, sell or trade. Contact Larry Lundberg at (715) 854-2672 for inquiries.

Also on Saturday, March 9 there's a Cabin Fever Party at Sally & JC's Bar at W10707 Benson Lake Road in Athelstane and the annual Bucket Golf event at Tony's Dockside Bar & Grill, starting at 11 a.m.

GOOD NEWS GAZETTE

Put out an invitation several weeks ago for folks to share the good news if they catch someone doing a good deed. The other day, a sweet lady from Goodman called to give some credit to a few of the good friends who help her out regularly.

The lady, we'll call her Bev, is 91 years old, and lives alone in her cabin far off the main road on a small lake in the Town of Goodman.

She can't walk any more. She gets around inside her house with the help of a Hover-Round, but can't get outside in winter. She hasn't been out of her house since November. "I'm totally housebound," Bev said. The Hover-Round works outside in summer, but not in winter.

With help from her son and daughter-in-law she is able to live alone. And because of them and three very special friends she is not lonely.

Friend Rebecca lives across the lake, but walks over regularly to bring her treats and play a game of Scrabble. "It makes life worth living to know you have friends like that," Bev said.

Then there's Zelma. Zelma was a little girl when Bev and her family moved to Goodman in 1951. She's in her 70s now. Every Wednesday night Zelma comes over and cooks a meal for the two of them. After enjoying their meal together they visit, maybe playing cards, maybe looking at old photo albums, or maybe just visiting. Zelma has been doing this for the past three years. She's not doing it for pay, because there is none.

"I can't begin to tell you what a wonderful neighbor Zelma has been for all these years, and I can't begin to tell you how full my heart is for what she has done for me!"

And every Tuesday a gentleman friend who goes past her place on his way home from the Meal Site in Wabeno drops off some prepared meals for her and visits for an hour or so. "Those meals are excellent, and he saves me from having to eat all TV Dinners," Bev said. Because he's 85, they have a lot of things to talk about and enjoy each other's company and reminiscing about the good old days.

Her daughter-in-law does her grocery shopping and her son takes her to doctor appointments. She has three grandchildren (living in Crivitz, Wabeno and Illinois) and seven great grandchildren. Every weekend family members and close friends come up to stay at their private campsite and enjoy each other's company.

"At 91 I'm very grateful for the life I've had, and still have," Bev declared. "There's nothing more important to me than family and friends!"

There it is folks. When we do a little kindness, share a little love, we never know how far it may reach into someone's heart.

Isn't it great that Bev took the time to tell everyone just how much those good friends mean to her?

The request to share the good news still stands. Everyone needs to know that even though the bad guys seem to get all the headlines, they're still greatly outnumbered by the good guys. Problem is, most of the good things are done quietly, and no one ever finds out about them.

FOLLOW THE MONEY!


Minnesota's Senator Amy Klobuchar, one of the many Democrats running for president, says the science on "Climate Change" is clear, so Trump shouldn't waste money trying to disprove it.

She doesn't mention it, but when the weather worldwide proved them wrong by starting to turn colder, she and fellow promoters quit pushing the notion of "Global Warming" and started calling it "Climate Change" instead.

One of her supporters tweeted that Trump has invested hugely in polluting fossil fuels, and suggests that we need to "follow the money" to find the motive for his actions.

Like them, I say, follow the money!!!

Find out which politicians and their henchmen have invested heavily in alternative fuels and technologies, or are hired to promote the agendas of people who did. Do this, and maybe you'll understand why they're still pushing us to believe that climate change is something new and different, brought on by human actions and not what it really is - the ebb and flow of nature that started when this old world was created and has continued ever since.

Of course there's climate change! Even this current cold spell here is part of a cycle within the larger cycle. If it weren't for Global Warming centuries ago we'd still be covered by glaciers, and if it weren't for global colding that came later (okay, climate change), Vineland wouldn't have glaciers melting today where grape vines flourished when the Vikings landed.

Maybe if these "educated people" were educated instead of indoctrinated they'd have studied some history, logic and real science. If they did that, they'd realize that we humans simply are not powerful enough to influence weather patterns around the globe, even if we can have limited impact on individual land and water areas.

We just aren't that important!

God is"and if we don't start being careful about a whole bunch of things He's likely to decide that once again, this old world needs a good flushing! If He decides that this batch of humans is too evil to put up with any more, that will happen, regardless what changes the "Green" movement has forced upon us.

And, as to those evil carbon emissions" check the science books"one volcano can (and has) put more carbon emissions into the atmosphere than every smokestack, chimney, vehicle and campfire put together have emitted since time began.

P.S.: After Noah parked his Ark, God promised there'd never be another world-flushing flood. He did not promise to never wipe us out by smog, air pollution, water contamination, fire, ice, wind, pestilence, interplanetary impact, or some other means we can't even imagine yet.

COOKIN' TIME

St. Patrick's Day is coming up on Sunday, March 17. Lots of us use St. Patrick's Day as an excuse to eat green food and drink green beer. We also like to enjoy Corned Beef and Cabbage, but today's recipe for Auld Sod Stew is probable a dish better known in Ireland than the Corned Beef and Cabbage that is an American Irish tradition. Culinary historians tell us that immigrants escaping from the Irish famine in the mid-1800s learned about corned beef from their Jewish neighbors in this country. In Ireland the peasants didn't get to eat much beef, and used a version of bacon in many of their stews, as well as mutton or sometimes lamb. During the famine brought on by the potato blight they didn't get to eat many potatoes either, or much of anything else, for that matter. Eating stews with any sort of meat and potatoes in them was a wonderful, wonderful treat, and a real cause for celebration..

AULD SOD STEW

This recipe includes options for cooking in a slo cooker,as well as making it gluten free. The original Irish recipe doesn't call for them, but I like to add about two cups of frozen or washed cut fresh green beans about half way through cooking the stew, or right at the start if I'm using the slo cooker. If you need to be gluten free, use coffee or cola instead of the beer, which almost always contains gluten. Then leave the flour out and when everything is almost done, stir 2 tablespoons cornstarch into half a cup of water. Stir this into the stew and keep stirring until it boils and thickens. (The cornstarch should be added with the stew simmering on the stove, not in the slo cooker.) If you're not gluten-free, this is delicious served with Irish Soda Bread.

2 pounds beef or lamb cut in 1 1/2 inch cubes

3 tablespoons lard (or Olive Oil)

3 cups carrots, cut in 1/2 inch chunks

6 Irish potatoes, cut in medium chunks

2 yellow onions, chunked

4 stalks celery, coarsely sliced

3 cloves garlic, chopped

1/4 cup flour (if making gluten free, see above)

1 1/2 teaspoons salt

1 teaspoon pepper

1 tablespoon dried thyme

1 tablespoon dried parsley

3 cups beef broth

1 can or bottle (12-ounces) Irish Stout Beer or one 12-ounce can of Cola

Wash, chop, slice and chunk all the vegetables and put them into a large mixing bowl. Mix flour, salt, pepper, thyme and parsley and mix until everything is covered. Heat a very heavy dutch oven and add the lard or oil. Sear the meat, sprinkling on more salt and pepper while it browns. Add the seasoned and floured vegetables and mix well. Be sure to scrape out the bowl to get as much seasoned flour as you can. Let brown just a little, then add the broth and the beer or cola. (Beer is authentic, cola is an accommodation for those who don't want alcohol. One and a half cups of brewed black coffee could also be used. Cook on medium heat for two hours. Taste and add more salt, pepper, parsley and/or thyme if you like. Cook on low heat for half hour or so longer.

SLO COOKER OPTION: Brown the meat, then pour the meat and floured vegetables into the slow cooker. Add the liquid and cook on high for 6 hours or 8 hours on low, 30 minutes before serving, add seasonings if necessary. Thicken and bring to a boil on high if you're using the gluten free option.

IRISH SODA BREAD

Caraway seeds are traditional in this, but we don't like them, so we just leave them out.

2 1/2 cup sifter flour

1 cup sugar

1 teaspoon baking powder

3/4 teaspoon salt

1/2 teaspoon baking soda

1 cup raisins

1 stick butter

2 tablespoons caraway seeds

1 teaspoon vanilla

several dashes nutmeg & cinnamon

1 cup buttermilk

1 egg

Combine first five ingredients. Cut in butter. Mixture should resemble cornbread mix. add raisins, caraway seeds, nutmeg and cinnamon. Stir well. Add buttermilk, unbeaten egg and vanilla. Mix until all dry ingredients are well moistened. Pour into greased cake pan. Bake at 350 degrees for 60 minutes.

RED LOBSTER CHEDDAR BAY BISCUITS

With this copy-cat recipe you can enjoy those wonderful Red Lobster biscuits even when you aren't eating out! They're also good with Irish Stew, even if they're not traditional on the Auld Sod.

2 1/4 cups all-purpose flour

2 1/2 teaspoons baking powder

2 1/2 teaspoons sugar

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup cold butter, cubed

1 cup shredded cheddar cheese

3 tablespoons minced fresh chives

1 cup buttermilk

Preheat oven to 425 degrees. In a large bowl, whisk the first five ingredients. Cut in butter until mixture resembles coarse crumbs; stir in cheese and chives. Add buttermilk; stir just until moistened. Turn onto a lightly floured surface; knead gently 8-10 times. Pat or roll dough to 3/4-in. thickness; cut with a floured 2-1/2-in. biscuit cutter. Place 2 inches apart on a greased baking sheet. Bake 10-12 minutes or until golden brown. Serve warm.

SPINACH PIZZA

When they hear about this, the kids may decline and say enough green is enough. If they taste it, their minds might change.

You need:

1 Pizza crust

Olive oil

Digiorno Marinara Sauce

1 package frozen chopped spinach

23 ounces cottage cheese

1/2 cup Parmesan cheese

1 cup grated mozzarella cheese

2 slices deli ham, cut in strips

Cook spinach according to package directions and drain. Mix thoroughly with cottage cheese and Parmesan. Brush pizza crust with olive oil and spread with marinara sauce. Add spinach mixture and cover with mozzarella. Sprinkle with ham strips. Preheat oven to 400 degrees. Bake 10 to 15 minutes. Spinach-cheese mixture may be prepared ahead and refrigerated.

EASY PISTACHIO DESSERT

This is a nice green dessert for make-believe Irishmen on St. Paddy's Day. To intensify the green effect, use a few drops of green food coloring to tint the whipped topping as green as you want it before you put it on the dessert. Keep this in mind for Easter also. This has ice cream in it, but it's not served frozen.

45 Ritz crackers, crushed

3/4 cup melted butter

1-1/2 cup milk

2 (3-3/4 oz.) packages instant pistachio pudding

1 quart vanilla ice cream

9 ounce carton frozen whipped topping, or real whipped cream

2 large Heath bars, crushed

Mix crushed crackers and melted butter together and pat into a 9x13 inch pan. Bake at 350 degrees for 10 minutes. Cool completely. In a large bowl beat pudding with milk, then add the ice cream and beat until smooth. Pour onto the cool crust. Top with Cook Whip. Sprinkle with crushed heath bars. Refrigerate at least 4 to 6 hours, or better yet, overnight.



Thought for the week: A prayer for Lent, offered by St. Ephriam the Syrian, who lived in 305 to 373 AD, applies just as well today: "O Lord and Master of my life, give me not the spirit of laziness, despair, lust of power, and idle talk, but give rather the spirit of sobriety, humility, patience and love to Thy servant. Yea, O Lord and King, grant me to see my own transgressions and not to judge my brother, for blessed art Thou unto ages of ages. Amen"
