Hi Folks!

By the time most of you read this we’ll know whether or not that old groundhog has seen his shadow. Of course, up here in the north country we’re pretty much guaranteed six more weeks whether the sun shines on Feb. 2 or not. Maybe here it could mean only six more weeks of winter instead of 12?

VICTORY BEACH

Had an inquiry recently from a reader in Sheboygan who grew up in Marinette. He’s been lying awake nights wondering if Victory Beach in Menominee was named for Victory in World War II. Am pretty sure it was, but it could just as well have been named for the United States Victory in World War I, which was achieved with the help of the famed 32nd Division, which was made up mainly of men from Marinette and Menominee.

Does anyone know for sure? If so, please share the information.

Do know that Red Arrow Park in Marinette was named for the famed Red Arrow Division of the National Guard, which traces its roots back to the Civil War when the Marinette/ Menominee contingent was part of a contingent of men from the “western” states - Wisconsin, Michigan and Indiana - that became known as the Iron Brigade. They also fought in the Spanish American War.

The 32nd Division was was the first American Division to pierce the famed Hindenburg Line, and was nicknamed the “Red Arrow Division” because of their success at piercing enemy lines. The 32nd Division was organized under War Department orders on July 18, 1917 of National Guard Units from both Wisconsin and Michigan. They served on the front line during World War I from May of 1918 until the end of the War on Nov. 11, 1918, and earned the name “Les Terribles” from the French. The 32nd Division was the only American division to be bestowed with a nom-de-guerre by an Allied nation during the war.

The unit again earned unprecedented honors in World War II, in which they logged 654 days of active combat duty.

LET’S EXPRESS OURSELVES


Those Occupy Wall Street people have really gotten me to thinking.

Freedom of expression is indeed one of the special freedoms we have here in America, so why don’t more of us take advantage of it?

Seems like Lincoln’s Birthday would be a grand occasion to express our love for all the things our country stands for, and take advantage of all the freedoms we enjoy. So why not travel to his monument in Washington, D.C. next week to do it?

Let’s all pack up some tents, or maybe load up the motor home, and head for Washington, D.C.

Certainly those folks shouldn’t mind if we camp out for a few days on the National Mall. We’d just be there to express ourselves, and we do have Freedom of Speech and Freedom of Assembly, after all. Certainly none of those fine upstanding police officers would try to stop us.

We could get those nice big boxes of colored chalk, one for each of the kids, and encourage them to express themselves too. Drawing flags and smiley faces on those nice white monuments should be a good way to express their love for our country, don’t you think?

Wonderful way to teach appreciation for all the good things we Americans enjoy.

Maybe they could do some expressive art work in the Capitol or the White House too. Walls, floors and sidewalks are all good canvasses for individually expressive artwork.

Why wait? Let’s just do it!

BRIGHTEN THE KITCHEN

If age has taken its toll on your kitchen appliances, cheer up. You can have them looking bright as new without a whole lot of effort.

First, wash them well with a solution of regular dishwashing soap and water. Then rinse with a vinegar and water solution. Finally, apply some liquid car polish with a damp cloth and polish until the shine is back.

THYROID PROTECTOR

A recent health show on television said the fastest growing cancer in women today is thyroid cancer. It was suggested that the increase could possibly be related to the use of dental x-rays and mammograms. The show’s host demonstrated that on the apron the dentist puts on you for dental x-rays there is a little flap that can be lifted up and wrapped around the neck. Many dentists don’t bother to use it. Also, there is something called a “thyroid guard” for use during mammograms, but some physicians don’t use it unless the patient requests it.

The jury apparently is still out on just how effective the protectors are, and just how much the x-rays are responsible for the increase in thyroid problems, but in the meantime, ask that the protectors be used when you have a mammogram or dental x-rays. Costs nothing extra and could save your life.

WEIGHTY PROBLEM

Speaking of dental work, a friend recently commented she had thought of one good thing about going to her dentist, as opposed to going to her doctor. The dentist doesn’t weigh her before starting the exam.

That story brings another to mind. The hefty lady dragged herself home after a hard day’s work on the evening shift and collapsed on the couch. When her two teenage sons came in with a couple of strapping buddies she sighed and said she was so tired she wished someone would just carry her off to bed.

As a joke, they decided to do just that. Two grasped her under the arms and two took her legs, and off they tried to go. She laughingly went limp and let them try. After considerable grunting and groaning they finally accomplished their goal.

But she heard one mutter after they had her safely tucked into bed, “Wow! That was a job! We should have made two trips!”

SEMANTICS

Another friend has a problem when facing too many options. Says he feels like a centipede that’s been told to put its best foot forward.

BEAUTY MASK

Facial lotions and potions can cost a small fortune. Here’s a facial regime that brightens skin and relives winter drought for mere pennies, provided you have half an hour or so to spare.

Before you start, put on some soothing music.

First, for a deep cleansing mask, stroke milk of magnesia all over your face with cotton balls, but avoid the eye area. Leave on for 10 minutes, then remove with a warm wash cloth.

Next, to moisturize, mix one egg yolk, 1 teaspoon honey and 2 tablespoons of sour cream. Apply to clean skin with cotton balls, again avoiding the eye area.

Now cut two slices from a cucumber. (Use the end pieces and then you can cut up the rest for a salad.) Lie down on bed or couch and place the cucumber slices over your eyes. Relax like that for 15 minutes, and then rinse thoroughly with warm water and finish with a splash of cold. Add commercial moisturizer or anti-wrinkle cream at this point if you like, but you shouldn’t have to.

COOKIN’ TIME

2-MINUTE BREAKFAST

Think you don’t have time for a good breakfast in the morning? This lovely Breakfast burrito. Cooks in half a minute, and not even a dirty dish if you do it right! Allow half a minute for preparation, and your breakfast is done in one. For kicks, use pepper jack cheese instead of the Mexican blend cheese. If you have bacon bits, add some to the beaten egg before nuking.

1 flour tortilla (6-inch)

1 egg

1 tablespoon shredded Mexican cheese blend

1 tablespoon salsa

salt and pepper

Line a 2-cup microwave-safe cereal bowl with microwave-safe paper towel. Press tortilla into bowl and if you have some handy, spray with buttery flavored cooking spray. If not, that’s okay too. Break egg into center of tortilla and sprinkle on some salt and pepper. Beat egg gently with a fork until blended, being careful not to tear the tortilla. Microwave until the egg is almost set, 15 to 30 seconds, depending on your microwave. Remove tortilla with paper towel liner from bowl to flat surface. Top egg with cheese and salsa. Fold bottom of tortilla over egg, then fold in sides. Eat as is, or microwave another 15 to 30 seconds or so to melt the cheese.

CHICKEN MARSALA

This copy cat recipe is said to taste exactly like the Olive Garden version. I’ve never tasted theirs, so can’t say, but do know this is an incredible way to enjoy chicken, and the meal would make a lovely Valentine’s delight for you and your honey. Takes about 15 minutes to prepare, so it hardly cuts in at all on cuddle time.

4 boneless skinless chicken breast halves

1/4 cup cake flour

1/2 teaspoon salt

1/2 teaspoon oregano

4 tablespoons oil

4 tablespoons butter

1/2 teaspoon pepper

1 cup fresh mushrooms, sliced

1/2 cup Marsala wine

Combine flour, salt, pepper, and oregano in a shallow dish. Heat the oil and butter in a skillet until it begins to bubble lightly. Dredge the chicken in the flour, coat evenly. Cook the chicken on medium heat for about 2 minutes on the first side, until lightly brown. As you flip the breasts to the second side, add the mushrooms around the chicken pieces. Cook about 2 more minutes, until lightly browned on the second side. Stir the mushrooms. Once the second side is lightly browned, add the wine around the pieces, cover the pan and simmer for about 10 minutes. Transfer to plates and serve. Add a tossed salad, a baked potato, two glasses of wine, and peel him some grapes for dessert. Just kidding. But an assortment of pre-sliced or chunked fruits and cheeses is a light and lovely dessert.

SOUP KITCHEN SPECIAL

You can’t eat any cheaper than this, even at the old time soup kitchen. Plan to make this next time you cook a roast of any kind, including chicken, or even if you’ve purchased a rotisserie chicken. Go ahead and make gravy from the pan drippings. Eat what you want, then add the rest to the soup. But before slicing and serving the meat, trim off all the fat, skin, bones and gristle, if there are any. If not, the soup isn’t free. Trim some slices of meat if you want to, or save the recipe for another time when there are scraps to salvage. Boil together the bones, fat and other trimmings for at least an hour. Strain, then refrigerate overnight so the fat comes to the top and hardens. When it’s time to make the soup, get rid of the fat. The dog will love you for it. Use the broth that settles below it toward the quart called for in the recipe below. Add water and bouillon cubes if necessary. When everything is done add chunks of the leftover meat, and there’s your bonus meal.

1 quart beef broth (left from the roast combined with water

or add canned broth if necessary)

1 cup tomato sauce (or two cups vegetable juice)

1/2 cup minced onion

1 cup cabbage, chopped

2 cups vegetables of your choice (celery, green beans,

potatoes, carrots, summer squash, etc. are all good)

1/2 teaspoon dried basil, thyme or oregano (or mixed)

1/8 teaspoon pepper

1/4 cup uncooked small pasta shells or noodles

1 cup leftover shredded or cubed meat

In a large pan bring everything but the pasta or noodles to a boil and simmer until the vegetables are nice and tender. Add pasta and simmer 10 minutes or until tender. Add meat and heat through. Taste, and add salt and pepper if needed. This is good with garlic bread. Also with peanut butter or grilled cheese sandwiches. This can easily be put in a crockpot on low around lunch time and be ready by supper. Add the noodles or pasta during the last 1/2 hour.

RAINBOW POKE CAKE

Remember this old favorite? Use strawberry or cherry Jell-O with any kind of white cake mix cake for a lovely Valentine’s Day treat.

2 baked 8 or 9 inch white cake layers, cooled

1 package (3 ounces gelatin dessert mix, any flavor)

1 cup boiling water

1/2 cup cold water

1 container frozen whipped topping, or 8 ounces real whipped cream, or your favorite white frosting

Place cake layers, top side up, in two clean layer cake pans. Prick each cake at half-inch intervals with a long-tined serving fork. Dissolve gelatin dessert mix in boiling water. Stir at least one minute. Add cold water and pour carefully over the cake layers. Chill 3 to 4 hours. Dip one cake pan in warm water for 10 seconds or so, being careful not to splash any water onto the cake. turn out onto the serving plate. Top with 1 cup of the whipped topping or spread on half of the frosting. Repeat with the second layer and place it on top of the first one. Frost top and sides with remaining whipped topping or frosting and chill. Cut into slices to serve. Garnish with cherries, strawberries or whatever if you wish.

Thought for the week: Remember when you’re tempted to agitate for more government assistance for this or that special need, that whatever one person receives without working for, someone else must work for without receiving. Our government has no money of its own, unless we start selling off the Grand Canyon and other national treasures. And the way things are going, it may come to that!
